The first systematic study into the effects of interfacial curvature and additive interfacial density on ice crystallisation will be undertaken. Interfacial curvature effects will be established by comparing the crystallisation mediated by additives in bulk solution and at the (i) planar air-water interface (ii) planar oil-water interface (iii) oil in water wmulsion interface and (iv) water in oil emulsion interface. The additives will be linear small-molecule and polymeric alcohols ranging from water-soluble to insoluble species. Emulsion droplet sizes will be determined by SAXS, laser diffraction and optical microscopy. The extent of crystallisaiton will be followed by ultrasonic velocity measurements in the emulsions, and by in-situ optical microscopy in all other systems. The crystal phase, orientation and size range obtained will be determined by WAXS, optical microscopy and ESEM techniques. Additive interfacial density effects will be investigated by varying the additive concentration. This study will enable the quantification and theoretical modelling of interfacial ice crystallisation in emulsions, and will establish the droplet size regimes in which the proceses of ice nucleartion promotion and crystal growth inhibition dominate.
