A number of recent reports, including work from our group, have indicated that silicone emulsifiers may be used to manufacture semi-solid w/o emulsions at low concentrations and low (room) temperatures. In this invesitgation, we intend to examine the effects of processing variables on the cream structure. In parallel to this, we intend to develop the combined use of rheological and dielectric techniques as a means of assessing the structure of the creams following on from work conducted during a previous Soft Solids project, with a particular view to developing an on-line dielectric monitoring device. We also intend to develop the use of differential interference contrast (DIC) microscopy and high sensitivity DSC as further supplementary techniques.
