An improved version of the particle scattering apparatus (PSA) due to van de Ven will be constructed to allow easy and reproducible measurements of the dynamic interactions between colloidal particles. Specifically, the interaction of one mobile particle in a laminar shear field impinging upon a particle fixed on a wall will be measured. Existing computer simulations of colloidal interactions will be modified to fit the measured particle trajectories to a functional inter-particle force distance relationship. Monodisperse emulsions will be prepared via a depletion flocculation method (as previously) to be examined by the PSA. Bulk emulsion properties (eg creaming and flocculation) will be examined by rheology and the propagation of ultrasound and will be compared with the predicted behaviour obtained from computer simulations using the measured interaction forces. Pure surfactant and protein stabilised systems will be investigated; the results from the latter and work elsewhere will be used to predict the effects of adsorbed protein layers on the processing of such systems.
