Xathan gum and locust beam gum are commonly used polysaccharides which undergo a temperature-dependent rheological synergy. This synergy is associated with a conformational change in the xantan gum, although the nature of this transition is poorly understood. In this project, high sensitivity differential scanning calometry will be used to measure the temperature and energy associated with that conformational change in order to gain a more fundamental insight into the gel-forming properties of these materials. This will in turn lead to a more rational design and optimisation of products containing these polysaccharides.
