During the extrusion of solid-liquid pastes, the fluctuations in the pressure measured at or near the die contain useful information related to the quality of the paste and performance of the process. Defects such as pockets of entrapped air, agglomerates and poor mixing can be detected using signal processing algorithms developed in project GR/N24870/01. Real time versions of these algorithms offers great potential for on-line quality control of paste extrusion processes.This industrial secondment project involves developing truly real-time data collection and analysis methods based on the knowledge generated by GR/N24870/01. These methods will be tested on a process scale chocolate extruder located at Nestle's York research facility.A significant feature is the development of an appropriate software interface, which could be used in the several industrial sectors utilising paste extrusion technologies.
