Motivated by experimental progress in producing degenerate Fermi alkali gases, we will investigate the properties of the ground and excited states for attractive gases with S>1/2.In contrast to what might be expected, we have found in preliminary work that the ground state is a condensate of composites each with 2S+1 particles (ie only pairs in the case of S=1/2). In this work we will concentrate on the experimental signatures of this new exotic state of matter, such as the excited states and properties in a magnetic field. There we anticipate a sequence of critical fields, as the composites are broken up as the gas becomes increasingly spin-polarised. Finally we determine the thermal behaviour of the condensate. It should be noted there is no simple mean field theory for this type of ground-state/excited states.In addition we will examine the robustness of the assumption of spin-independent interactions. Firstly as a perturbation, and then the more interesting case where some of phase-shifts are positive and some negative. This 'frustrated' case is likely to contain phenomena.
