Conventional methods for measuring chemical potential are generally invasive and destroy or alter the process under investigation. In addition, they provide little or no information about the spatial or temporal heterogeneity of a process. The aim of this study is to develop a range of metal chelate complexes and nitroxide free radicals whose effects on the NMR relaxation time of water, or fat, will quantitate a wide range of pH and redox values. The specificity and efficacy of those indicators to measure pH and redox in heterogeneous systems will then be modelled. When these interactions are understood, the information will initially be used to monitor the diffusion of acetic acid into vegetables and to evaluate the effect of 'minimal processing' on pH. Once this has been demonstrated, there is the potential to use this technology to probe the chemical potential of a large number of applications areas including;1) academic (novel insight to diffusion, control of chemical reactions);2) industrial (food processing, bio-fermentation reactors);3) environmental (soil);4) medical (drug delivery, gut pH and diffusion).
