Ultrasound measurement, allied to a good understanding of ultrasound propagation in soft solids is complementary to mechanical rheometry and may provide important information on the structure of the system and the particle interactions. There is strong experimental evidence that ultrasound is sensitive to the formation of soft solid structures. Ultrasound measurements in soft solids may therefore allow the determination of the features of the system, and the development of a sensor for soft solid characteristics. Existing theories of ultrasound propagation in dispersed systems are inadequate to allow quantitative interpretation of ultrasound measurements in soft solids, or to relate them to the elastic properties or interparticle interactions of the system. The propagation of ultrasound through a system of interacting particles will be modelled using a variety of mathematical techniques (boundary-integral, perturbation, mean field, numerical simulation) and the results compared with experiment using two model systems, one comprising an oil-in-water emulsion which forms a particle gel via a depletion mechanism and the other, aggregating casein micelles.
