We wish to develop a multipass system which is capable of carrying out precise experiments on a range of soft solids. The apparatus would be able to determine the processibility, rheology and microstructure of soft solids over a broad range of temperature, pressure and shear histories. We plan to carry out a preliminary investigation on three systems, namely fats, chocolate and clays. The multipass system is a purpose-designed experimental apparatus of proven ability as a rheometer. We wish to extend its capability to allow X-ray and optical microstructure measurements and to test the machines performance in relation to following processibility and microstructure changes.
