The project will examine the mixing of highly loaded suspensions and pastes. It will aim to develop generic concepts, studying the processes operating in a reciprocating orifice plate mixer. The geometry of the plate will be varied to give different flows, the degree of mixing being monitored by changes in pressure, positron emission particle tracking and through product sampling. The following instrumental methods will be used: oscillating and flow rheometry, microscopy (optical and confocal), and chemical analysis. Model systems of confectionery and non-confectionery materials will be used to build relationships between practice and theory.
