We propose an experimental programme to investigate the formation, dynamics and non-equilibrium behaviour of a new class of soft materials - dispersions of solid particles in viscoelastic surfactant phases, especially the smetic (L...) phase. The pure L... phase is known to form monodisperse 'onion'-like particles (multilamellar vesicles) under controlled shear, with the particle size controllable by the shear rate during production. By a combination of rheological, light scattering, optical and freeze fracture electron microscopic techniques, we will investigate the possible incorporation of solid particles into ionions or other bilayer phases, elucidate the nature of the resulting structures, and characterise the properties of the composite soft solids so formed.
