Funding is requested for a two year research programme aimed at improving our currently limited knowledge of the science underpinning and processing of long-chain hydrocarbons. In particular we want to examine the processing of confectionery products and surfactant systems. The planned research, which is in collaboration with Cadbury Ltd and Unilever Research, seeks to characterise and inter-relate the crystal structure, external morphology and growth of kinetics of triglycerides and surfactant systems. In particular we plan to use the synchrotron radiation source at Daresbury Laboratory to characterise the structure of these soft solids and follow the crystallisation in-situ as a function of temperature, shear and composition. The work is aimed at enabling the structural properties of these materials to be continuously monitored on-line in such a way that processing conditions can be improved and optimised. These investigations will be combined with sample purification, studies of nucleation and growth kinetics and spectroscopic studies carried out at Strathclyde University.
