The project addresses the development of a biosensor capable of monitoring ethanol with specificity and appropriate for its determinations in alcoholic and low alcohol beverages. The principle is centred on a novel advance made in the applicant's research group on the production of an enzyme modified epoxy polymer, which is suitable for thin layer deposition and could be extended for photolithography. The project will investigate the development of an alcohol dehydrogenase polymer and its coupling to an electrode through NAD and a mediator, such that alcohol can be accurately and reproducibly estimated. The coupling and deposition techniques will be developed and investigated in close cooperation with Neotronics to produce a 'fabricatable' model. Specificity will be assessed for the catalogue enzyme and compared with that of the enzyme which will be isolated by BRF in collaboration. Enzyme and deposition combinations will be tested to cover the required range of concentration and specificity.
