We propose to examine, mainly by experiment, the swelling and dissolution behaviour of lecithin/bile salt/cholesterol mixtures. This is made possible by combining two strands of recent work (dissolution of amphiphiles and bilayer formation kinetics in lecithin/bile salt mixtures). As well as illuminating the generic physics of phase transition kinetics using a tunable model system, this should also shed light on the physical processes involved in lipid solubilazation in the digestive tract. Indeed, we plan to explore analogies between digestion and detergency - how similar is the stomach to a washing machine?
