This proposal addresses fundamental questions about the organisation at interfaces involving liquid crystalline phases. Specifically we will determine interfacial tensions as a function of time at the isotropic/anisotropic boundary in microcrystalline cellulose and chitin dispersions, exploring the effect (if any) of defects and orientation. We will also use environmental scanning electron microsocpy to look at the packing in these same liquid crystalline phases at the air-water interface at high resolution. Finally the impact of added (other) polysaccharides on this packing will be considered.
