The project involves an experimental programme to measure effects of upstream variables and lauter operating variables on mash filtration and wort recovery. Main variables are feed grist size and shape, shear rate and rheological state of grist during agitation and pumping, mash conversion time, lautering time and temperature. There are other secondary variables. Interactions between all of these and their effects on mash and wort composition (eg colloid and protein contents) will be measured. This information will form the basis of a process model, to be developed to quantify the effects of interactions between feed, process suspension and operating variables on wort separation and recovery.
